This is the best breakfast potato recipe I have come across! Before I discovered your recipe, I would microwave the potatoes first and then saute, but they always tasted soggy.

Now I do it your way! I find that it does take a good 20 minutes before the potatoes are tender. Sometimes I just slice the potatoes a little smaller and they cook up faster.
