  1. Combine Wet Ingredients: Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 5-inch loaf pan with nonstick cooking spray and set aside. In a large bowl, mix together eggs, sugar, oil, pumpkin, buttermilk, and vanilla extract. Mix until evenly combined.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, cloves, and ginger.
  3. Stir Together: Gently fold the flour mixture into the wet, mixing until just combined. A few lumps are okay, but don’t overmix. Stir in the chocolate chips.
  4. Bake and Enjoy! Pour the batter into the prepared pan, then bake for 55-60 minutes. The bread is done when a toothpick inserted in the center comes out with just a few moist crumbs. Cool in the pan for 10 minutes before removing to a wire rack to cool completely before slicing.

  • Guinness Irish Brown Bread Variation: If you want to add a deeper, maltier flavor, add Guinness beer. Replace 1 cup of the buttermilk with 1 cup of beer and bake following the same instructions.

  1. Heat Milk and Cornmeal: Place 1 tablespoon of butter into an 8-inch cast iron skillet. Place the skillet in the oven and then preheat to 375 degrees Fahrenheit. Mix the milk and cornmeal in a microwave-safe dish and then microwave for 1 minute, checking to make sure it doesn’t boil over.
  2. Stir and Continue Heating: Stir the mixture and microwave again for another 3-4 minutes, stopping every minute or so to stir until the mixture is thick and creamy.
  3. Whisk Egg Whites: Set the cornmeal mixture aside. In a separate bowl, using a hand mixer, whisk the egg whites until soft peaks form.
  4. Combine Ingredients: When the egg whites have been whipped, return to the cornmeal mixture and mix in the honey, egg yolks, baking powder, and salt.
  5. Add Egg Whites: Fold the egg whites into the cornmeal mixture to create the batter. Remove the cast iron skillet from the oven and pour the batter into the skillet.
  6. Bake and Serve: Bake the bread for 25-30 minutes or until a toothpick inserted comes out clean. Remove the skillet from the oven and serve the spoon bread fresh as a side with honey and butter.

  1. Mix the Dry Ingredients: Preheat the oven to 350 degrees Fahrenheit, then spray a 9×5-inch loaf pan with non-stick cooking spray. Whisk together the flour, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
  2. Combine the Wet Ingredients: In a separate bowl, whisk the sugar, oil, eggs, applesauce, molasses, and vanilla.
  3. Stir Batter Together: Using a spatula or spoon, add the flour mixture to the sugar and oil mixture. Mix until everything comes together into a batter.
  4. Bake: Pour the batter into the prepared loaf pan and bake for 55-65 minutes. A toothpick inserted in the center should come out clean. Remove the loaf from the oven and let it cool completely before frosting.

  • Add Nuts: You can add nuts to this loaf if you’d like. Chopped pecans would be good as a topping.
  • Butterscotch Chips: Try adding butterscotch chips to the loaf! I would try ⅓-½ cup of chips.

Baking soda vs baking powder….what is the difference? I’m here to teach you the basics of each so that you can improve your baking skills. Learn the whys, hows, and when they’re important to achieving delicious recipes.

Baking powder and baking soda are key ingredients in so many classic recipes! Baking soda is a must when baking cookies. Sometimes I use both, like in our favorite copycat Crumbl cookie recipe. And I couldn’t make my homemade pancake mix without the help of baking powder because it makes them SO fluffy!

Baking Soda vs Baking Powder

Baking soda and baking powder are both chemical leavening agents. The ingredient in a recipe makes dough or batter rise through a chemical reaction. However, they are NOT the same! They have notable differences, so let’s compare baking soda vs baking powder and break it down!

What is Baking Soda?

Baking soda is powerful! It is 3 times stronger than baking powder! In the world of science, baking soda is known as a base. It will create a reaction when it comes in contact with an acid. This also translates into the world of baking! This reaction produces a carbon dioxide gas, and the bubbles from this reaction give a light texture in baked goods. Recipes that use baking soda will also call for some type of acid to create this chemical reaction.

Acids That React With Baking Soda

We’re all familiar with the reaction of baking soda and vinegar but many ingredients react in recipes to create carbon dioxide. Here is a list of acid ingredients commonly used in baking:

  • Vinegar
  • Citrus Juices
  • Buttermilk
  • Sour Cream or Yogurt
  • Cocoa Powder (Not Dutch Process)
  • Brown sugar
  • Cream of Tartar
  • Molasses or Honey

Irish Soda Bread is a bread recipe that relies on the reaction of buttermilk and baking soda to rise. My fun Wacky Cake is another example of this reaction. The baking soda and vinegar in the recipe give this cake the fluffiest texture and it’s SO yummy!

Too Much Baking Soda?

Using too much baking soda in your recipes without neutralizing it with an acid will result in a strong metallic flavor from the baking soda. Some people might think the more baking soda you use the more rise you’ll get, but that isn’t how baking soda works. It needs to be just the right amount and has to have an acid to react and neutralize it.

What is Baking Powder?

Baking powder actually has baking soda in it! It also contains another acid like cream of tartar or cornstarch that helps neutralize the baking soda. This means there isn’t a need for another acid for baking powder to react. Baking powder reacts in two different ways, and if you’ve ever wondered why the container says “double-acting”, here’s why:

  1. Moisture: Baking powder first becomes active when it gets wet. Air bubbles are created when it comes in contact with water, milk, or any moisture in the recipe. This is why most recipes need to be baked right away while the chemicals are still active.
  2. Heat: Baking powder also becomes active when it’s exposed to heat during the baking process. As the ingredients reach a certain temperature, the baking powder creates lift and helps the baked goods rise and become fluffy! 

My Grandma’s Perfect Fluffy Pancakes are the perfect example of this reaction. The baking powder in her pancake recipe reacts with the heat of the skillet making them fluffy and soft! Another example is this delicious Ricotta Cake! The baking powder makes it so light and fluffy as it bakes.

Why Use Baking Soda AND Baking Powder?

It is necessary to use both baking soda and baking powder in certain recipes! Using both can improve the texture and the flavor of your baked goods. It’s fun to see what happens when you use either baking soda, baking powder, or both! Check out the results below!

  1. Improve Texture: Some recipes use both to improve the texture. Baking soda alone doesn’t lend enough rise to some recipes. Instead of just adding more baking soda, which will only lead to a sour metallic taste, you add baking powder to give extra lift. My Twinkie Cake uses both and the texture is fluffy and delicious!
  2. Flavor: Using both can also improve the flavor of your recipes. Sometimes you need both because you want the tang of an acid in your recipe to come through in the finished product. If you only rely on baking soda for rise, it will neutralize the flavor of the acid you’re using. Using both allows the tangy acidic flavor of say buttermilk or lemon juice to come through. Try this Glazed Lemon Bread and you’ll see what I mean!

Can You Substitute One For the Other?

In short, I wouldn’t recommend it! It’s tricky to do without affecting the rise, texture, and flavor of your baked good. It’s better to follow a recipe the way it is written to get the best results!

Do Baking Powder and Baking Soda Expire?

Yes, they expire! Here are some tips for storing and keeping baking powder and baking soda fresh!

  • In the Cupboard: It is best to store baking soda and baking powder in an airtight container. Baking powder already comes in an airtight container, but baking soda should be removed from the cardboard box and stored in an airtight container. Store them both in a dry, cool place like a cupboard. Storing in the Refrigerator is not recommended.
  • Expiration Tips: It’s helpful to write the date you open them on the container. Store unopened baking soda at room temperature for 18 months. After opening, store at room temperature for 6 months. Store unopened baking powder at room temperature for 6 months. After opening, store at room temperature for 3 months!
  • How to Test the Freshness of Baking Powder: Add about ¼ cup of warm water to a bowl along with 1 tablespoon of baking powder. Stir the mixture and it should become a bit fizzy. If there isn’t any fizz then it’s bad.
  • How to Test the Freshness of Baking Soda: For baking soda, it’s the same test, but instead of warm water, use plain white vinegar. The mixture will be very fizzy and bubbly when it’s fresh. If it isn’t very active then your baking soda has gone bad.

  • Large Egg: Leave your egg out while you are preparing the ingredients so that when it’s time to mix it in, it’s room temperature.

  • Vanilla Extract: A splash of vanilla will make these muffins nice and sweet.
  • Unsalted Butter (melted): This adds in a richness and flavor to the banana chocolate chip muffins.

Instructions for Making Banana Chocolate Chip Muffins

These banana chocolate chip muffins are next level and you will love every single bite. My kiddos eat these up so I like to double the batch and save some for later!

  1. Prep the oven and the pan: Preheat the oven to 375 degrees Fahrenheit and spray a muffin liner with pan spray and, if desired, line it with muffin liners.
  2. Combine wet ingredients and sugars: Add the mashed bananas, egg, sour cream, vanilla, butter, oil, brown sugar, and granulated sugar to a large bowl and beat with a hand mixer until combined.
  3. Add dry ingredients to wet ingredients: Add the flour, baking soda, baking powder, and salt to a medium bowl and whisk until combined. Add the dry ingredients to the wet ingredients and mix until just combined.
  4. Fold in the chocolate chips: Fold in the chocolate chips by hand. Scoop the batter into the prepared muffin pan until each muffin well is ⅔ of the way full.
  5. Bake and cool: Bake for 18-22 minutes, until a toothpick comes out clean from the center of a muffin. Let the muffins cool for 5-10 minutes before serving.

Must Try Tips

We all want our recipes to turn out delicious! Here are a few things I learned that make this banana chocolate chip muffin recipe even better:

  • Save those old bananas! If you have bananas turning black, peel them and freeze them for these delicious banana muffins! Let the frozen bananas thaw and drain off the excess liquid before mashing them for the recipe.
  • Add-Ins: Switch things up by substituting the milk chocolate chips for semi-sweet chocolate chips, mini chocolate chips, or use ½ cup of chocolate chips and ½  cup of chopped walnuts or pecans.
  • Make mini muffins! My kids LOVE mini muffins! They are just so cute and tiny! Spray a mini muffin pan well or use mini muffin liners. Fill them ⅔ of the way full and bake for 14-16 minutes at 375 degrees Fahrenheit, until the tops are lightly browned.

Instructions

  • Preheat the oven to 375 degrees Fahrenheit and spray a muffin liner with pan spray and, if desired, line it with muffin liners.
  • Add 1 cup overripe bananas, 1 large egg, ¼ cup sour cream, 1 ½ teaspoons vanilla extract, ¼ cup unsalted butter, 2 tablespoons vegetable oil, ¼ cup brown sugar,and ½ cup granulated sugar to a large bowl and beat with a hand mixer until combined.
  • Add 1 ⅔ cup all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and ½ teaspoon salt to a medium bowl and whisk until combined. Add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in 1 cup milk chocolate chips by hand. Scoop the batter into the prepared muffin pan until each muffin well is ⅔ of the way full.
  • Bake for 18-22 minutes or until a toothpick comes out clean from the center of a muffin. Let the muffins cool for 5-10 minutes before serving.

Have you ever had Irish Soda Bread? I tried it a few years ago and have loved it ever since. It’s super easy, just mix the dry ingredients, cut in a little butter, stir in buttermilk, shape the dough, and bake. No kneading required!

It’s kind of like a biscuit in loaf form, crusty on the outside, soft in the center, with great flavor even though it uses less butter. Serve it warm with butter or jam. And if you like something heartier, check out my Irish Brown Bread, it’s another traditional favorite that’s nutty, dense, and perfect with soups or stews.

4 Ingredients to Make It

I don’t know about you… but the fact that Irish soda bread only requires 4 simple ingredients and it doesn’t need any kneading or proofing makes this recipe a winner. Here’s everything you’ll need:

  • All-Purpose Flour: The base of the soda bread, providing structure and body.
  • Baking Soda: There’s no soda bread without the baking soda! It’s the leavening agent, reacting with the buttermilk to create bubbles that make the bread rise.
  • Salt: Enhances the flavor of the bread.
  • Buttermilk: Adds a slight tang and moisture, and also helps activate the baking soda.

  • Softened Butter (for serving): The perfect addition to this tasty soda bread!
  • Jam (for serving): For some sweet flavor. Try this homemade strawberry jam recipe if you’re up for the challenge!

How to Make Irish Soda Bread

When it comes to homemade bread, this recipe is as easy as it gets. Even without yeast, proofing, and kneading, Irish soda bread is perfect- it’s crisp on the outside and perfectly tender on the inside.

  1. Preheat Oven: Preheat the oven to 375 degrees Fahrenheit.
  2. Prepare Dough: Whisk together the flour, baking soda, and salt. Then create a well in the middle of the dry ingredients and pour the buttermilk into the center.
  3. Shape: Mix the dough together using your hands, or a wooden spoon until a shaggy dough forms. Dump the dough out onto a lightly floured surface and bring it together just until it forms a round.
  4. Bake: Place the loaf on a parchment lined baking sheet. With a knife, score the top of the loaf in an x. Place it in the oven and bake for 35-45 minutes or until the crust is a golden brown.
  5. Cool and Serve: Take the soda bread loaf out of the oven and allow it to cool at least 10 minutes before cutting into it. Serve with butter and jam or alongside my Guinness Beef Stew.

Tips and Variations

  • Buttermilk Substitute: If you don’t have buttermilk, mix 2 cups milk, whole milk is best, with 2 tablespoons vinegar or lemon juice, mix the liquids together and allow the milk to curdle before using it.
  • Don’t Overwork: Do not work this soda bread dough much at all, you just want to mix it until it comes together and then form it into a round that stays together on its own. If you work the dough too much it will be tough in texture.
  • Add Raisins: Some people like to add raisins to their Irish soda bread. If this is a preference of yours you can fold in ¾ cup raisins after most of the liquid has been incorporated into the dry ingredients, taking care not to overwork the dough.

Storing Leftovers

Store at room temperature in a bag or airtight container once the loaf is cooled, for up to 4 days.

Can I Freeze Soda Bread?

Yes you can! Wrap the cooled baked loaf tightly in plastic wrap or foil for up to a month of freezer storage. Thaw on the counter, then warm it in the oven on low heat for a refresh.

You can also freeze the unbaked soda bread dough after shaping it. Wrap it tightly and freeze for up to 3 months. When you’re ready to bake, simply thaw the dough in the refrigerator overnight and then pop it straight into the oven.

We cannot stop eating this Nutella banana bread! It’s just too good! I think we can all agree, banana bread is one of the best quick breads there is, and adding rich and creamy Nutella really takes it to the next level. This gorgeous loaf is swirled to perfection with chocolate hazelnut spread. Each bite is moist, sweet, and bursting with a blend of banana and hazelnut flavor! It’s the best combination!

As an added plus, this Nutella banana bread looks fancy but it is really easy to make. Which is a very good thing because you’re going to want to enjoy this anytime you have overripe bananas! In fact, this is the perfect excuse to let your bananas over-ripen!

Ingredients Needed

The list of ingredients to make this Nutella banana bread recipe is very simple. You only need 8 ingredients! You’ll want to keep them on hand, so you can bake up this loaf on repeat! See the recipe card at the bottom of the post for exact measurements.

  • Bananas: Three mashed bananas (about 1 cup) makes the bread super moist and flavorful. For extra sweetness, use extra ripe bananas that have some brown spots.

How to Make Nutella Banana Bread

This Nutella banana bread recipe is prepped and ready in just 10 minutes! Then, let the oven do the rest of the work. The hardest part about making this is waiting for it to bake and cool! Here’s how to layer the batter and Nutella for the most delicious quick bread:

  1. Prep: Preheat the oven to 350 degrees Fahrenheit and spray a 9×5-inch loaf pan with pan spray and set aside.
  2. Combine Ingredients: Mix the banana, baking soda, oil, sugar, eggs, salt, and flour in a large bowl until combined.
  3. Layer Nutella: Pour half of the batter into the prepared pan. Heat the Nutella in a small bowl for 20-30 seconds, until it is very soft, almost liquid. Drizzle half of the Nutella over the batter in the pan in zigzags and then top it with the remaining batter.
  4. Finish Layering: Drizzle the rest of the Nutella over the top of the batter in lines. Use a knife to swirl the Nutella into the banana batter, going up and down the length of the pan a few times. Be sure the knife goes down to the bottom of the pan so the middle layer of Nutella gets swirled as well!
  5. Bake and Cool: Bake for 40-45 minutes, until a toothpick comes out clean from the center. Let the bread cool for at least 20 minutes before slicing.

Tips and Variations

We cannot get enough of this Nutella banana bread! Here are some substitution options, and also a tip for quickly ripening your bananas. This is such a great way to take your average banana bread up a notch. I can’t wait for you to try it!

  • Butter: The oil can be substituted for butter! Use the same amount of melted butter in place of the oil. If you choose to use salted butter, omit the pinch of salt included in the recipe.
  • Sugar: If you love a little more sweetness, substitute white sugar for brown sugar, or for a healthier option try coconut sugar or monk fruit sweetener.
  • Frozen Bananas: Use frozen bananas by thawing them overnight at room temperature. If there is any liquid from the bananas, simply discard that before mashing.
  • Save your overripe bananas! If you have bananas that are turning black, these are excellent for banana bread. You can peel them and freeze them for later or use them right away in this Nutella banana bread for an extra sweet and concentrated flavor of banana.
  • To Ripen Bananas Quickly: If you have a couple of days, place the bananas in a brown paper bag and close it. This traps the ethylene from the bananas and helps them ripen faster. In a pinch, you can bake the bananas in a 300 degree Fahrenheit oven for 25-30 minutes. Bake until the peel turns black.

Storing Leftovers

This Nutella banana bread stores really well! It also freezes beautifully! We highly recommend you make an extra loaf to freeze for later. Then, you can have a slice of this deliciousness at a moment’s notice!

  • At Room Temperature: Place the cooled bread in a ziplock bag or airtight container. Store it in the pantry or counter at room temperature for a few days. Always keep the bread wrapped or stored when not eating. This will lock in the flavor and keep it moist.
  • In the Freezer: Allow the bread to cool completely. Wrap the entire loaf tightly with 2-3 layers of plastic wrap, followed by a layer of foil. Place the wrapped bread in a large freezer ziplock bag and lay it in the freezer. When ready to enjoy, thaw for a few hours at room temperature, or overnight in the refrigerator.
