You don’t have to, but you could trim any thick or hard fat from the outside of the short ribs. Leave the marbled fat running through the meat, though, since it keeps the ribs tender and flavorful. If there’s a tough membrane on the bone side, you can remove it, but it’s not always necessary.

I had never made short ribs and am glad I tried this. Very easy and very tasty! I have made this twice now and left overs freeze well since they can be frozen with sauce. It was an added treat to warm up and enjoy the left overs! It is a bonus to be able to prepare and then put them in the oven for 2 or 2.5 hours. Thank you for the recipe!
