Reading the reviews I got nervous to try this. I lowered my expectations and expected disaster.
I decided to use much less blueberry filling to hopefully avoid too much moisture which could make it collapse/gummy(?) as other stated theirs turned out that way. Idk I’m not a baker AT ALL. Says to use a can, I used about 1/3 of a can. I will make blueberry topping with some of the left over can to put on top of the loaves.

I didn’t make the crumble top or lemon glaze so I can’t speak on that. As I said I lowered my expectations of it working and didn’t want to waste things. I was also wondering if that made it cook differently and I wanted the highest possibility of it cooking through.

The taste is still delicious!!! Texture is nice and airy. Next time I will try to add more filling and will make the crumble topping.

I’m sorry that happened. Have you checked your oven temperature? 80 minutes should be plenty of time for those to bake. Or did you open the oven door? Every time you open the oven, the temperature inside drops and it has to come back up to temp. This could contribute to it not baking fully.

I followed the recipe as stated, two 9×5 loaf pans, added 20 minutes to the stated cook time, used a toothpick to check for done-ness and both loaves still collapsed into gummy messes in the center after cooling. Such a bummer because they smelled wonderful cooking.

I tried this recipe today even though there were bad reviews and good reviews. I cooked the loaves 70 minutes and used the toothpick test for doneness. The toothpick came back clean so I removed the loaves to cool. After cooling, both loaves sunk and are very gummy. Won’t try again.

Hello! This recipe is meant to make 2 loaves in 9×5 pans, not a 9×13 pan. If you try it again with the loaf pans, let me know how it turns out for you!

It came out gummy and without flavor. I would recommend not trying this. Your better off making something with fresh blueberries as this pie filling doesn’t work.

This recipe turned out so well! I did read the reviews first, so was a little nervous as I was also going to bake for the first time in my new convection oven! I followed the recipe exactly. I had to adjust oven temp and cooking time, as per convection conversion, but still ended up cooking it for full time. The addition of the icing brought it over the top. Happy I made two loaf pans, as it’s delicious ?
