Oh no! I am sorry it ended up being watered down.
A couple possibilities; Some brands of chicken are injected with broth or water, so that definitely could be the culprit.
It can also help to let the chicken rest for about 10 minutes or so after it comes out of the oven to absorb moisture that it let off while cooking.
In the future you could sear them in a skillet first over medium-high heat for 3-4 minutes per side, then finishing them in the oven with the sauce for 15-20 minutes!

I was disappointed. I found that the baking chicken creates water that totally watered down the lovely sauce, creating a very bland chicken dish. Next time I’ll bake the chicken first, dunno the water and the cover with sauce.

Parts of this were good, but if I make it again I will leave out the ginger or cut it way back. I like the sweetness and the pineapple, but nobody at the table liked the ginger.

Delicious! Family loved it. My family is sauce crazy so I had to quadruple the sauce recipe. Will definitely be making again.
