    • Size: Leave small sprouts whole, but cut big ones in half so they roast evenly.
    • Frozen: Frozen works fine, just thaw and pat them dry so they don’t steam instead of crisp.
  • Maple syrup: Real maple syrup tastes best, but imitation works in a pinch.

Bacon-Wrapped Brussels Sprouts Recipe

These are my go-to appetizers when we have a get-together. They are easy, delicious, and I feel like I’m making good life choices for eating Brussels sprouts, even if they are covered in bacon and maple syrup.

  1. Cut & Season Sprouts: Preheat the oven to 400°F, then line a baking sheet with parchment paper or aluminum foil and set aside. Trim the stem ends of the Brussels sprouts and add them to a medium bowl. Toss them with olive oil, salt, and pepper to taste.
  2. Wrap with Bacon: Wrap each Brussels sprout with a half slice of bacon and secure with a toothpick if necessary. Lay them on the baking sheet so they don’t touch each other.
  3. Make Sauce: Whisk together the maple syrup and brown sugar in a small bowl.
  4. Brush and Bake: Use a pastry brush to brush the sauce over the tops of the Brussels sprouts. Bake for 30 minutes, flipping them halfway through, until the bacon is crisp and the Brussels sprouts are tender. Remove immediately and place them on a serving dish.   1. Prepare: Preheat the oven to 375°F, then spray a 19×13-inch baking dish with cooking spray and set aside. In a large bowl, add the chicken, cream of chicken soup, sour cream, garlic powder, cheddar cheese, sliced green onions, almonds, and bacon, then stir to combine.
  2. Spread: Spread the mixture evenly into the prepared baking dish.
  3. Topping: In a small bowl, add 1 sleeve crushed Ritz crackers and ½ cup melted unsalted butter. Stir to combine, then sprinkle the cracker mixture over the casserole.

I love making pasta salads because they’re quick to throw together and satisfying. You probably already have everything you need in your fridge and pantry. The beauty of this recipe is that you can switch things up to use what you have!

  1. Boil the Pasta: Cook the bowtie pasta until al dente according to the package instructions. Drain the pasta and set aside.
  2. Cook the Beef: In a large skillet, cook and brown the ground beef over medium-high heat, about 7-10 minutes, then season with salt and pepper to taste.
  3. Combine: In a large bowl, combine the cooked pasta, cooked ground beef, cooked and crumbled bacon, halved grape tomatoes, corn, black beans, cubed cheddar cheese, red bell pepper, green onion, and jalapeno.
  4. Whisk the Dressing: In a medium bowl, whisk together the mayonnaiseBBQ sauce, Worcestershire sauce, chili powder, and ground cumin. 
  5. Dress the Salad: Pour the dressing over the pasta salad ingredients and then toss to combine.
  6. Serve: Garnish with chopped cilantro and serve cowboy pasta salad immediately! If you’re not serving immediately, wait to add the dressing until right before serving.

Instructions

  • Cook 1 (12-ounce) box bowtie pasta until al dente according to the package instructions. Drain the pasta and set aside.
  • In a large skillet, cook and brown 1 pound lean ground beef over medium-high heat, about 7-10 minutes. Season the beef with salt and pepper to taste.
  • In a large serving bowl, combine the cooked pasta, cooked ground beef, 1 cup cooked and crumbled bacon, 1 cup halved grape tomatoes, 1 (14.5-ounce) can corn, 1 (14.5-ounce) can black beans, 8 ounces cubed cheddar cheese, 1 large diced red bell pepper, 1 bunch chopped green oniononion, and 1 diced jalapeno.
  • In a medium bowl, whisk together 1¼ cups mayonnaise, ½ cup bbq sauce, 1 tablespoon Worcestershire sauce, 1 teaspoon chili powder, and 1 teaspoon ground cumin.
  • Pour the dressing over the pasta salad ingredients and toss to combine.
  • Garnish with chopped cilantro and serve immediately! If you're not serving immediately, wait to add the dressing until right before serving.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 2 days. The pasta absorbs dressing as it sits, so add a splash of extra dressing to revive it.

I love Stanley Tucci for so many reasons! I especially love that he shares his incredible recipes with the world, and they taste amazing! His version is a little fancier than what I know my family will eat. So, I made some changes to make it more accessible and kid friendly for you!

  1. Prep: Preheat the oven to 350 degrees Fahrenheit. Spray a 9 x 13 x 2-inch casserole dish with nonstick cooking spray, then set aside. Add the cooked al dente pasta and bacon to a large bowl and set aside.
  2. Saute Vegetables: Add 2 tablespoons butter to a medium skillet and melt over medium heat. Add the onion and cook for 2 minutes before adding the garlic and peas. Cook for an additional 2 minutes.
  3. Mix: Remove the onion mixture from the heat and add it to the bowl with the pasta. Add the alfredo sauce and stir until everything is evenly combined.
  4. Bake: Transfer to the prepared baking dish and top with the parmesan cheese. Bake for 15- 20 minutes or until heated through and the cheese on top is nicely browned. Garnish your casserole with chopped parsley and serve.

  • Can I use Pancetta? Stanley uses pancetta in his casserole, but I used bacon because it’s what I had on hand. If you have pancetta, go ahead and use it!
  • Can I Make Béchamel Sauce? For the sauce, Stanley uses bechamel. I used jarred alfredo because it is quicker, easier, and more accessible. Here is the link to make my béchamel sauce recipe.
  • Do I have to use peas? Change up the vegetable to use up whatever leftover veggies you have on hand! Chopped asparagus, green beans, Brussels sprouts, or broccoli would be delicious.
  • What kind of pasta should I use? You can use almost any kind of cooked pasta in this casserole. It doesn’t have to be farfalle.

I don’t know what it is about football and appetizers, but they just go hand in hand! Especially anything to do with pork! There is just something about watching men throwing around a “pig skin” while eating all things pig! These pig shots have sliced pork sausage wrapped in thick-cut bacon! Trust me when I say make these for the next game day celebration, and everyone will be raving about them!

How to Make Pig Shots

This pig shots recipe is very simple to make! Just plan a little extra time for rolling the bacon around the sausage slices and filling each “shot.” You can even let the kids help!

  1. Prep and slice sausages: Preheat the oven to 375ºF and line a baking sheet with parchment paper. You may add a baking rack to the pan if desired, just give it a light spray with pan spray. Slice the sausage into about 24 slices, or double the amount of bacon slices you have.
  2. Bacon: Cut the bacon in half.
  3. Make the Rolls: Roll each sausage round up in a half-slice of bacon so the edge of the bacon matches up with the bottom edge of the sausage. Use a toothpick skewered through the bacon and entire piece of sausage to secure the two together. The result should look like a cup.
  4. Set Aside: Set the little cups on the prepared baking sheet and set aside.
  5. Make the Filling: Combine the cream cheese, cheddar cheese, jalapeños, and barbecue rub seasoning.
  6. Fill: Scoop the cream cheese filling into a piping bag or large ziplock bag, snip the corner, and squeeze the filling into the bacon-wrapped sausage cups until they are nearly full. Don’t overfill them! The filling will expand as it bakes.
  7. Add Jalapeño Slices: If desired, place sliced jalapeno on top of some or all of the pig shots.
  8. Make the Glaze: Combe the bbq sauce, maple syrup, and brown sugar in a small bowl.
  9. Bake: Brush the tops of the pig shots with the glaze and bake for 35-45 minutes or until the bacon is crisp and rendered. Let them cool for a few minutes before serving. I recommend removing the toothpicks before serving.

Smoking Instructions for Pig Shots

Smoke Them! Traditional pig shots are smoked, not baked. I baked mine in order to make the recipe more accessible, but you absolutely can smoke these babies! Smoke the pig shots at 275-300 degrees Fahrenheit for 75-90 minutes or until the bacon is crisp. Brush the glaze on them in the last 15 minutes of smoking.

Tips and Variations for Making Pig Shots

Pig shots are the ultimate appetizer! Here are a few tips and ways you can customize them to make them perfect for you.

  • How to prevent blackened bottoms? You may find the bottoms of the pig shots get very black when baked directly on the parchment-lined sheet pan, but this is just because the sugar in the glaze caramelizes! They aren’t burned and will still taste amazing. To avoid blackened bottoms, you can use an oven-safe baking rack on top of the sheet pan to prevent the pig shots from sitting in the glaze as they melt and caramelize.
  • What sausage should I use? You can use any kind of smoked sausage, such as Kielbasa or Bratwurst. I recommend using a pork-based sausage to keep the ‘pig’ in these pig shots.
  • What Bacon should I use? You can use regular-cut bacon for these, and they will likely end up slightly crispier. But, I found that thick-cut bacon held its shape so much better and it is the traditional cut used for pig shots.
  • Add Extra Flavor! Sprinkle some BBQ seasoning on top of them before baking for added BBQ flavor.
  • Cheese Recommendations: You can swap out the cheddar cheese for any number of different cheeses, but I suggest trying pepper jack, Monterey Jack, or even substituting a portion of the cheese for grated parmesan.
  • Add-Ins for the Glaze: Mix 1-2 tablespoons of bourbon into the glaze to change up the flavor, or add a pinch or two of cayenne pepper.

  • Do you HAVE to use cottage cheese? For this recipe, you really should! If you don’t like the texture of the cheese curds, try blending it smooth before adding the cottage cheese to the potato mixture.
  • Try some additional add-ins! Dice up some bell peppers or mushrooms and cook them with the onions. Or add diced ham or crumbled sausage with the bacon!

  • In the Fridge: Keep leftover Amish breakfast casserole covered tightly with plastic wrap or an airtight container in the fridge for up to 5 days. Reheat in the microwave in 30-second increments until fully heated through.

  1. Cook: Cook the bacon in the oven, over the stove, or in the air fryer—you choose your preferred method! Drain the grease, chop or crumble the bacon into pieces, and set aside.
  2. Prick: Preheat the oven to 375 degrees Fahrenheit. Line an 18 x 13 x 2-inch baking sheet with parchment paper. Roll out the crescent dough, onto the prepared pan. If you’re using crescent rolls, pinch the seams together. Prick the dough using a fork.
