They are so fluffy and soft! Plus we always have all the ingredients on hand.

They do always take longer in the oven than the recipe calls for (often like ten minutes longer!) but I just keep an eye on them and keep checking. They are so delicious and easy!

Hi Julie, you can use 1/4 cup of unsweetened applesauce for each egg, or you can mix 1 tablespoon of flaxseed with 2 tablespoons of water for each egg. Let me know how they turn out! And thanks for your sweet words, that means a lot to me!

Hi Ted, thank you for your question. I wouldn’t recommend using almond flour, as it doesn’t have any binding agents and will leave you with crumbling, grainy muffins. If you want to try these muffins gluten free, I recommend using a gluten free flour mix that is 1:1 (like Bob’s Redmill) with regular flour.

You can replace the maple syrup with honey.
