It was a strangely thick “batter” and difficult to mix everything. Instead of bacon, I cooked 1 pound of Owens Hot sausage, 1 chopped green bell pepper, 8 ounces diced mushrooms, added a 12 ounce package of diced ham, and 1 teaspoons granulated garlic. I also added 2 more eggs. I precooked the meat/veggies and froze the mixture because I took all of the ingredients to a quilting retreat and was the 4th day cooker. (I had portioned out the cottage cheese, swiss/cheddar cheeses, and frozen potatoes.) I let the meat mixture and potatoes thaw overnight in the fridge. The next morning, I mixed everything in a large bowl and spread into a buttered 9 x 13 baking dish. I baked it for 30 min (to check doneness) and then an additional 10-15 minutes. Everyone loved the casserole and wanted the recipe. I emailed the recipe, along with the changes I made, to each lady.

I made this for breakfast this morning and we will be having this one again. This was really good. I used applewood smoked bacon for the bacon and used ricotta cheese for the cottage cheese. No one in this house likes cottage cheese! lol! Thanks much for the recipe.

Oh my gosh, I hate when that happens. I was pretty lucky and the only thing I can’t eat now because of pregnancy is bubble gum. Ricotta would be a great substitution!

Hi Natalie! Yes you can! You may prepare this casserole the night before, cover it with plastic wrap, and store it in the fridge. You may need to add additional baking time to ensure the casserole is fully baked through because it will be chilled.
