I’m glad you like the egg roll recipe! Crumbed tofu or cauliflower rice could be a good vegetarian alternative for you. I’ve even seen cooked and crumbled tofu in the freezer section, which would make it easy for you!

Yes, I have instructions listed in the post, but here they are!
-Make a double batch of the filling and roll the egg rolls as directed.
-Place the egg rolls on a cookie sheet to flash freeze for about an hour to an hour and a half. This will prevent the egg rolls from sticking together in the freezer
-Transfer the egg rolls to a freezer safe ziplock bag or container and store in the freezer for up to 3 months.
-To cook, remove the egg rolls from the freezer and place in the air fryer, coating the outsides with oil. Cook at 400 degrees and add 1-2 minutes per a side till heated through.

I am not exactly sure which curry you are asking about but I have my chickpea curry, or my red curry. You can add sweet potatoes and veggies to all of these!

Tried these with my grandkids and they loved them. Also made the green curry with sweet potato and a bunch of other veggies and garbanzo beans but now I don’t see the link for that recipe anymore. I really like it and want to make it again!

I used the air fryer at 350° and about 5 min each side. I used grnd pork and omitted the celery. They turned out great! I love the healthier alternative to frying. Definitely adding this to my rotation. I served the egg rolls with brown rice pad thai noodles, chicken and broccoli (similar to lo mein). I mixed up my own stir fry sauce with oyster sauce, soy sauce, sesame oil, Sriracha, garlic, ginger and a little brown sugar. Thanks for sharing this recipe!

Hi Barb, no problem. Frying is best but if you’d like to bake these place in a single layer on a lightly greased baking sheet. Lightly brush the outsides with vegetable oil. Cook in a preheated oven at 425 degrees for 15-20 minutes, flipping once half way through. They will be golden but not a deep brown and probably not as crispy but still oh so good. You could also use this recipe which fries them in oil for a crispier shell. Let me know if you have any questions!

Delicious! I wonder if my egg roll wrappers were bigger? I got 3+ TBSP in each and they closed easily. I used shredded cabbage and finely diced carrots instead of a package of slaw but otherwise it followed your recipe exactly. The flavor is amazing!
